Ingredients for 4 servings:
- 750 g potatoes
- 500 g pumpkin(s) (Hokkaido)
- herbal salt
- pepper
- Parsley
- n. B. water

very quickly and easily
Peel the potatoes and pumpkin. Dice both. Place the potatoes in a tall pot, cover with water, and bring to a boil. After 5 minutes of boiling, add the pumpkin and simmer until tender. Remove both from the heat and puree. Season with herb salt and pepper and serve sprinkled with parsley. Serve with baguettes, ciabatta, sausages, or similar. Tips: If desired, you can stir in cream or grated cheese. We also always drain a little water before puréeing because we like the soup very creamy.
