Ingredients for 4 servings:

  • 8 tomatoes
  • 250 g sheep’s cheese
  • 500 g pasta
  • Balsamic vinegar
  • olive oil
  • Herbs of Provence
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 25 minutes

Cook the pasta according to the package instructions, then drain and rinse with cold water. Cut the tomatoes and feta cheese into small cubes. Season the tomatoes with salt and the feta cheese with pepper. Place everything in a large bowl. Pour over the balsamic vinegar and season with herbs de Provence, salt, and pepper. Finally, drizzle with olive oil (but be careful not to overdo it). Then refrigerate and let it sit for about an hour! It also tastes delicious with fondue or grilled meat. You can also vary it, for example, using mozzarella instead of feta cheese.
