Ingredients for 6 servings:
- 500 g tortellini, dried
- 1 jar of pesto, red, approx. 200 g
- 200 g tomatoes
- 200 g feta cheese
- e.g. pine nuts
- e.g. olive oil
- 1 bunch arugula
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes
Pasta salad for grilling, vegetarian
Cook the tortellini according to the package instructions and then let cool. Toss the pasta with the pesto. Chop the tomatoes and feta and mix in. Add pine nuts, if desired. If the pasta salad is too dry, add a splash of olive oil. Season with salt and pepper. Chop the arugula, wash it, and stir it in just before serving.
