Semolina pudding with fruit

Ingredients for 4 servings:

  • 750 ml milk
  • Salt
  • 1 packet of vanilla sugar
  • 180 g sugar
  • 90 g semolina
  • 2 eggs
  • 2 egg whites
  • 300 g berries (frozen wild berry mix)
  • Fat, for the molds

Instructions

Working time approx. 25 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Bring the milk to a boil with a pinch of salt, add the vanilla sugar, 60g sugar, and the semolina. Bring to a boil while stirring, then cover and let it swell for about 5 minutes. Let the semolina cool to lukewarm, stirring occasionally. Separate the two eggs and beat the egg whites until stiff. Whisk the egg yolks and mix them with the semolina porridge, then fold in the beaten egg whites. Mix the berries with 20g sugar and divide them alternately with the semolina into 4 greased small baking dishes. Place these on a baking tray and bake for about 10 minutes in an oven preheated to 200°C. Beat 2 egg whites with the remaining sugar until stiff peaks form and fill a piping bag with a star nozzle. Pipe a dollop of beaten egg whites onto each baking dish and bake for another 10 minutes.
