Creamy lemon yogurt ice cream with meringue pieces

Ingredients for 4 servings:

  • 300 ml natural yogurt
  • 1 pinch of salt
  • 200 g whipped cream
  • 100 g sugar
  • 2 lemons, untreated
  • 1 pinch of vanilla pulp
  • 1 handful of meringue(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

Recipe for the ice cream maker

Whip the cream with a small pinch of salt. Fold in the yogurt, sugar, and vanilla seeds. Grate some lemon zest and squeeze the juice. Add the zest and juice to the cream and yogurt mixture. Be careful with the lemon juice and fold it in gradually. Taste frequently; use a little less if needed. Pour everything into the ice cream maker and prepare according to the instructions. Just before the end, add the finely crushed meringue pieces to the ice cream mixture and fold in.
