Pear casserole with apricot sauce

Ingredients for 4 servings:

  • 4 pear(s), ripe
  • 3 eggs
  • 1 ½ lemon(s), the juice
  • 1 pinch of salt
  • 3 tbsp sugar
  • 3 tbsp flour
  • 50 g nuts, grated
  • 1 tsp baking powder
  • 1 tbsp butter
  • ½ can/n apricot(s)
  • ½ cup(s) sugar

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel, halve, and core the pears. Separate the eggs, beat the egg whites with the juice of half a lemon and salt until very stiff peaks form. Beat in the sugar and then loosely fold in the egg yolks, nuts, flour, and baking powder. Grease a shallow baking dish and pour the mixture into it. Place the pears on top, sprinkle with sugar, and bake in the oven at 200°C for about 40 minutes. For the apricot sauce, puree the apricots, juice, sugar, and remaining lemon juice in a blender and simmer on the stovetop for a few minutes. Serve with the hot casserole.
