Brini's oven-baked chicken on a bed of vegetables

Ingredients for 2 servings:

  • 2 chicken breasts
  • 2 pak choi
  • 6 tomatoes, aromatic
  • 1 large onion(s)
  • 50 ml rapeseed oil
  • Spice mix (tandoori spice)
  • ½ tsp salt
  • Salt and pepper, black, freshly ground
  • 1 pinch(s) of sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Wash the chicken breasts, pat dry, and rub both sides with the tandoori spice. Wash the bok choy and tomatoes and cut into medium-sized pieces. Roughly dice the onion. Toss the vegetables in a casserole dish with oil, salt, pepper, and a pinch of sugar. Preheat the oven to 200°C (top/bottom heat) and place the casserole dish with the vegetables on the middle rack. Sear the chicken breasts in a pan with a little oil and place them on top of the vegetables in the oven. Braise everything for about 45 minutes. Rice would go very well as a side dish. Otherwise, a great low-carb dish.
