Ingredients for 1 servings:
- 250 g flour
- 1 tsp baking powder
- 80 g sugar
- 1 packet of vanilla sugar
- 2 egg yolks
- 130 g butter
- 2 egg yolks
- 2 tsp milk
- 3 egg whites
- 100 g sugar
- 175 g desiccated coconut
- 2 drops of bitter almond flavor
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
For the dough, knead all the ingredients until smooth. If it’s sticky, wrap it in cling film and chill for a while. Roll out thinly on a floured surface and cut out stars in two different sizes (the same number of each size). Place the larger stars on a baking tray lined with baking paper. To brush, whisk the egg yolk with the milk and brush the larger stars with it. For the topping, beat the egg whites until stiff peaks form. Gradually add the sugar. Carefully fold in the desiccated coconut and the flavoring. Fill the mixture into a piping bag fitted with a star nozzle and pipe onto the large stars. Brush the small stars with the remaining egg yolk milk and place them diagonally onto the coconut mixture. Bake in a preheated oven at 200°C for around 10 minutes. Remove the cookies, still on the baking paper, from the cookies and leave to cool on a wire rack.
