Crispy yogurt ice cream

Ingredients for 4 servings:

  • 175 g bread(s), crumbled
  • 25 g walnuts, chopped
  • 5 tbsp sugar
  • 450 g low-fat yogurt
  • 2 egg whites
  • 1 tsp orange peel, untreated, grated
  • 1 pinch of nutmeg

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 5 minutes; Total time approx. 2 hours 25 minutes

Mix the crumbled bread with the walnuts (or other nuts) and sugar, spread on a baking sheet lined with aluminum foil, and toast under the broiler for about 5 minutes. Stir several times. Remove from the oven and let cool. Then mix the mixture with the nutmeg, orange zest, and yogurt. Beat the egg whites until stiff and fold into the mixture. Either freeze for about 2 hours or put it in an ice cream maker.
