Ingredients for 6 servings:
- some wild garlic leaves, fresh
- 1 box cress, fresh
- 1 bunch of chives, fresh
- 250 g butter
- 2 dashes lemon juice
- 2 garlic cloves
- 1 dashes lemon juice
- 1 dashes Worcestershire sauce
- 1 tbsp rapeseed oil or chili oil
- 2 tbsp chili oil
- Salt and pepper or cayenne pepper to taste
- chili powder
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cut the butter into pieces and beat with a hand mixer until smooth. Finely chop the wild garlic and sprinkle over the butter, then do the same with the cress and chives. Then beat in again with the mixer. Peel and finely chop the garlic cloves and add them to the butter. Then add the rapeseed and chili oil and beat again. Finally, add a squeeze of lemon juice, a squeeze of Worcestershire sauce, and the seasoning (to taste, but don’t skimp on the salt) and beat again. The constant stirring gives the flavor a rounded texture, and the lemon gives the butter a wonderfully fresh touch.
