Cauliflower – Broccoli – Casserole with Ham

Ingredients for 4 servings:

  • 750 g cauliflower
  • 1 ½ broccoli
  • 400 g carrot(s)
  • 200 g cooked ham
  • 150 g cheese (Gouda)
  • 50 g butter
  • 40 g flour
  • 250 g cream
  • salt and pepper
  • Nutmeg, freshly grated
  • Chives, in rolls

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean and wash the cauliflower and broccoli, and divide them into small florets. Peel the broccoli stalks and slice them thinly. Peel, wash, and finely dice the carrots. Bring ½ liter of salted water to a boil, cover, and cook the cauliflower for about 12 minutes. Add the broccoli and carrots about 5 minutes before the end of the cooking time and continue cooking. Drain the vegetables, reserving the cooking water. Cut the ham into strips and grate the cheese. Melt the butter in a saucepan and sauté the flour in it. Deglaze with cream and about 250 ml of the vegetable water and simmer the sauce for about 5 minutes, stirring constantly. Add the cheese and melt it while stirring. Season to taste with salt, pepper, and nutmeg. Transfer the vegetables to a baking dish, sprinkle with the ham, and pour the cheese sauce over it. Bake in a preheated oven (200°C, fan oven 175°C, gas mark 3) for 10-15 minutes. Cover with foil at the end if necessary to prevent the casserole from overcooking. Serve sprinkled with chives.
