Ingredients for 6 servings:

  • 500 g brown bread or black bread, cut into small cubes
  • 250 ml milk
  • 1 onion(s)
  • 2 eggs
  • 2 tbsp parsley, chopped
  • 2 tbsp butter
  • Breadcrumbs or oat flakes

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

great for using up leftovers

Heat the milk (use a little less if using fresh bread) and pour it over the bread cubes, letting it sit for about 10-15 minutes. Meanwhile, chop the onion and sauté it in the butter until translucent, taking care not to let it brown. When the bread is cool enough to handle, add the eggs, sautéed onion with butter, and parsley, and knead into a dough. If the dough isn’t firm enough, stir in a few tablespoons of breadcrumbs or oatmeal. Shape the dough into dumplings and place them in hot water. Allow them to puff up once, then let it sit for about 15 minutes.
