Cranberry dumplings with game dishes

Ingredients for 4 servings:

  • 250 g quark
  • 100 g semolina
  • 50 g flour
  • 1 egg(s)
  • 1 pinch of salt
  • 1 jar cranberries

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Knead the quark, semolina, flour, egg, and salt into a dough and let it rest in the refrigerator for 30 minutes. Cut out 1 tablespoon of dough, shape it into a round disc, and fill it with 1 teaspoon of cranberries. Then seal tightly and roll it into a dumpling. Gradually shape the dumplings and refrigerate for another 30 minutes. Boil gently (or simmer) in plenty of salted water until the dumplings float to the surface. A delicious accompaniment to any game dish.
