Lupine meal salad with spring onions

Ingredients for 2 servings:

  • 100 g sweet lupin meal
  • 260 ml water
  • 1 spring onion(s)
  • 40 g walnuts, chopped
  • ½ tsp salt
  • 1 small organic lemon(s)
  • 2 tsp, heaped tomato paste
  • ¼ tsp chili flakes
  • 2 tsp mint
  • 4 tbsp sunflower oil

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 27 minutes

simple, vegan, very tasty

Bring the lupin meal to a boil with the water, simmer on low heat for seven minutes, then let it rest with the lid on for a few more minutes. Meanwhile, finely grate the lemon zest and juice the lemon. Finely slice the spring onion and mix with the tomato paste, lemon zest, lemon juice, chili flakes, chopped fresh or dried mint, salt, and oil. Mix with the lupin meal and walnuts. Add more salt if desired.
