Ingredients for 2 servings:
- 2 onions, red
- 1 clove(s) garlic
- 3 tomatoes
- ½ bunch parsley
- 1 cup rice (100 ml)
- 2 cups water
- some salt
- 3 tbsp Ajvar, approx.

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
from the microwave
Dice the onions, garlic, and tomatoes. Microwave the vegetables with the rice, water, and a pinch of salt. With my 15-minute wholemeal rice, this takes 20 minutes at 800 watts. Meanwhile, chop the parsley. Stir in the ajvar and sprinkle with the parsley to serve.
