Ingredients for 4 servings:
- 1 cup bulgur
- 2 cups vegetable broth
- 1 bell pepper(s), red
- 1 onion(s), red
- 1 small zucchini, green
- 2 tbsp tomato paste
- 1 tbsp olive oil, good
- 1 tomato(s)
- ½ cucumber(s)
- salt and pepper
- Sugar
- Vinegar
- oil
- Paprika powder, sweet
- possibly chili flakes

great for grilling or just like that
Place the bulgur in a bowl (don’t use too much), pour over the hot broth, and let it swell for 10-15 minutes. Finely dice the onion, bell pepper, and zucchini and briefly sauté in a pan with the olive oil. Add about 1 teaspoon of sugar to the pan and let it caramelize briefly. Sauté the tomato paste and deglaze with a little water. Season with salt, pepper, and paprika (or chili flakes if you like it spicy). While it’s still hot, add the tomato and cucumber to the swelled bulgur. Finely dice the tomato and cucumber. Once the mixture has cooled slightly, add it and season with vinegar, oil, and spices. If you like, you can also add some mint to the salad. This gives it a fresh, oriental flavor. To serve, press the salad into a small bowl and turn it out. I personally think chili threads or red radish sprouts would be a fun garnish.
