Curd – soufflée with plums

Ingredients for 2 servings:

  • 250 g plum(s)
  • 1 tsp butter
  • 150 g quark, low-fat
  • 2 eggs
  • 2 tbsp flour
  • ½ tsp lemon(s), untreated, zest
  • 2 tbsp vanilla sugar
  • ½ tbsp sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat oven (electric oven: 200°C; gas mark 3; fan oven: 180°C). Halve and pit the plums. Grease a baking dish with butter. Cover the bottom of the dish with the plums. Separate the eggs. Beat the quark, egg yolks, flour, and lemon zest with a hand mixer until smooth. Beat the egg whites until stiff. Gradually stir in the vanilla sugar and sugar. Mix one-third of the egg whites with the quark mixture. Fold in the remaining egg whites. Spread the mixture over the plums. Bake the soufflé in the preheated oven for 25 minutes. Serve immediately.
