Low-carb bread – protein bread

Ingredients for 1 servings:

  • 5 egg whites
  • 2 eggs
  • 125 ml water, lukewarm
  • 300 g flaxseed meal
  • 6 tbsp olive oil
  • 1 tsp salt
  • 1 tsp cream of tartar baking powder
  • 1 tsp bread spice mix

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

Crack the eggs into the bowl of a food processor and beat for a good 3-4 minutes. Meanwhile, put the flaxseed meal in a bowl and mix with the salt, baking powder, and bread spice mix. The egg mixture should now be light in color. Now add the water and continue stirring. Add the dry ingredients and mix everything well. Finally, add the olive oil and stir everything for about 2 minutes more. Preheat the oven to 200°C (top/bottom heat). Line a bread pan with greaseproof paper (I wet the paper so it’s easier to handle), then pour the dough into the pan. Bake in the preheated oven at 180°C (350°F) for about 40 minutes.
