Ingredients for 5 servings:

  • 1 octopus, approx. 1.4 kg
  • 500 g potatoes
  • 300 g cherry tomatoes
  • olives
  • Parsley
  • Salt

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 20 minutes

Wash the octopus thoroughly, removing any sand. Then remove the teeth, eyes, and head contents. Bring a large pot of water to a boil. Immerse the octopus in the boiling water about 4-5 times for 1-2 seconds each, then add it completely. When the water boils again, reduce the heat and simmer the octopus at low temperature for 40-50 minutes. After the cooking time, remove the pot from the heat and let the octopus cool in the cooking water. Once the octopus has cooled, remove the loose skin with your hands and slice the octopus. Peel the potatoes, cut them into small cubes or slices, and boil them in lightly salted water until soft. Halve the cherry tomatoes and olives, and finely chop the parsley. Combine all the prepared ingredients in a large bowl, season with salt, and mix well. The appetizer is ready to serve.
