Ingredients for 2 servings:

  • ½ kg potatoes
  • 150 g cod
  • margarine
  • 1 large orange(s)
  • 100 ml olive oil
  • 2 stalks of spring onion(s)
  • 100 g olives, mixed
  • salt and pepper

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 35 minutes

Fish and potato salad – traditional salad in Malaga

Peel the potatoes, dice them, and boil them. Briefly fry the cod in a little margarine until tender. Then let everything cool for 2 hours. After the cooling period, gently mix the potatoes and shredded cod and add olive oil, olives, and finely sliced ​​spring onions. Season with salt and pepper. Garnish with orange slices. This salad is served as a summer salad in Malaga, where I discovered the recipe. If I’m short on time, I skip the cooling process; then the salad is warm and perfect as a main course. Serve with baguette.
