Ingredients for 2 servings:
- ½ kg potatoes
- 150 g cod
- margarine
- 1 large orange(s)
- 100 ml olive oil
- 2 stalks of spring onion(s)
- 100 g olives, mixed
- salt and pepper

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 35 minutes
Fish and potato salad – traditional salad in Malaga
Peel the potatoes, dice them, and boil them. Briefly fry the cod in a little margarine until tender. Then let everything cool for 2 hours. After the cooling period, gently mix the potatoes and shredded cod and add olive oil, olives, and finely sliced spring onions. Season with salt and pepper. Garnish with orange slices. This salad is served as a summer salad in Malaga, where I discovered the recipe. If I’m short on time, I skip the cooling process; then the salad is warm and perfect as a main course. Serve with baguette.
