Chicory and orange salad

Ingredients for 1 servings:

  • 2 chicory
  • 1 large orange(s)
  • 5 lettuce leaves (e.g. Lollo Rosso)
  • 1 large carrot(s), grated
  • 7 walnuts
  • 2 tbsp oil (walnut oil or other cold-pressed salad oil)
  • 1 tbsp balsamic vinegar
  • 2 tsp honey
  • 1 pinch(s) cinnamon powder
  • salt and pepper
  • possibly water

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Total time approx. 25 minutes

delicious, nutty winter salad

Slice the chicory into rings and wash. Then place it in a salad bowl along with the finely chopped orange. Grate the carrot and add it. Wash, tear, and add the lettuce leaves. Mix the vinegar, oil, and honey to make a dressing. Add a little water if desired and season with salt, pepper, and cinnamon. Mix the dressing with the remaining ingredients in the salad bowl and let it sit for a while (10 minutes). Before serving, roughly chop the walnuts and sprinkle over the salad.
