Red cabbage salad with feta cheese

Ingredients for 4 servings:

  • 700 g red cabbage
  • 4 oranges
  • 5 tbsp white wine vinegar
  • 6 tbsp walnut oil
  • ½ tsp salt
  • ½ tsp white pepper
  • 2 tbsp parsley, flat, chopped
  • 200 g sheep’s cheese
  • 1 egg(s)
  • salt and pepper
  • 50 g walnuts
  • 150 g breadcrumbs
  • Oil for frying

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour 15 minutes; Cooking/baking time approx. 1 minute; Total time approx. 1 hour 36 minutes

Trim the red cabbage, wash if necessary, and finely grate it. Peel two oranges so that the white pith is removed. Cut into slices, and juice the remaining oranges. Combine the juice, vinegar, walnut oil, salt, and pepper with chopped parsley and mix with the red cabbage. Let stand for 45 minutes. Mix with the orange slices and let stand for another 30 minutes. Cut the feta cheese into pieces. Beat the egg with salt and pepper. Grind the nuts and mix with the breadcrumbs. Coat the cheese first in the egg, then in the breading mixture. Fry in hot oil for about 1 minute on each side. Serve with salad!
