Ingredients for 3 servings:
- 250 g flour
- 100 g butter
- 80 g sugar
- 3 eggs
- 1 pinch of salt
- 150 g crème fraîche
- 3 tbsp milk
- ½ tsp baking powder
- 1 tsp lemon zest
Instructions

In a bowl, mix the flour and baking powder and set aside. In another bowl, separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Chill. In another bowl, beat the softened, but not melted, butter with the sugar and grated lemon zest on high for a good 3 minutes until light and creamy. Now gradually add the egg yolks, one at a time. Beat each egg yolk for at least 30 seconds to ensure everything is well combined. Once this has happened, add the next egg yolk. Now add the crème fraîche and milk and beat briefly on low speed. Sift the flour mixture over the mixture and fold in well. Mix everything until well combined and there are no lumps. Finally, carefully fold in the beaten egg whites. The batter should end up neither too thick nor too runny. If it isn’t, add a little more sparkling water or a little more flour. Once all the ingredients are combined, cover the bowl and let the batter rest in a warm place for a good 30 minutes. Brush the heated waffle iron with a little oil and pour in some batter. After about 2 minutes of baking time (depending on the appliance, so please be careful and check if necessary), carefully remove the waffles. Brush the waffle iron with oil again and pour in some more batter. Sprinkle the finished waffles with sugar and cinnamon, if desired, or serve with applesauce. The crème fraîche gives them a special touch, and they’re not overly sweet. If you prefer it sweeter, you can add more sugar or dust the finished waffles thickly with powdered sugar.
