Lamb's lettuce with mango, shrimp and walnuts in honey-mustard dressing

Ingredients for 2 servings:

  • 300 g lamb’s lettuce
  • 1 mango(s)
  • 2 handfuls of shrimp
  • 1 handful of walnuts
  • e.g. salt and pepper
  • e.g. lemon juice
  • 2 tbsp honey
  • 1 tbsp mustard, medium hot
  • 2 tbsp oil
  • 1 tbsp water
  • 1 tbsp herbs, frozen

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Wash the lamb’s lettuce. Peel the mango and cut into small cubes. Lightly crush the walnuts in your hand until smaller. Briefly fry the shrimp in a little oil in a pan, season with salt, pepper, and lemon juice. Combine all the dressing ingredients in a small bowl and mix well, or shake well in a small shaker. Toss the lamb’s lettuce with the mango, walnuts, and dressing. Serve on a plate and garnish with the shrimp.
