Spaghetti with shrimp and cold tomato sauce

Ingredients for 4 servings:

  • 500g spaghetti
  • 500 g tomatoes
  • 1 bell pepper(s), red
  • 1 handful of parsley
  • 1 garlic clove(s)
  • 2 tbsp tomato paste
  • 1 tsp salt
  • 1 tsp pepper
  • 1 lemon(s), juice
  • 2 tbsp Parmesan, grated
  • 400 g shrimp(s)
  • ½ red chili pepper(s)
  • 1 tomato(s), diced
  • 1 handful of arugula

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes

Ideal for hot days

Cook the spaghetti according to the package instructions. Meanwhile, add all the other ingredients for the cold tomato sauce—except for the chili pepper, arugula, and tomato—to a blender and blend until smooth. Brown the prawns in a pan, adding the finely chopped chili pepper. Remove the pan from the heat. Add the cooked spaghetti, still dripping wet, to the prawns, pour over the tomato sauce, and mix. For the topping, finely dice the tomato, wash the arugula, and pour both over the pasta. Serve immediately.
