Spaghetti with shrimp and arugula

Ingredients for 4 servings:

  • 500g spaghetti
  • 1 point Shrimps, frozen
  • 200 g cherry tomatoes
  • 100 g arugula
  • 3 garlic cloves
  • 2 shallots or 1 small onion
  • 1 dash of oil (chili oil)
  • some Parmesan
  • olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely chop the shallots and garlic, halve the cherry tomatoes, and roughly chop the arugula. Cook the spaghetti in plenty of salted water until al dente. Sauté the shrimp with the shallots and garlic in olive oil. When the shallots are translucent, add a little more of the pasta water. Drain the cooked pasta and toss with the sauce. Finally, stir in the cherry tomatoes, arugula, and a dash of chili oil. Serve sprinkled with Parmesan cheese.
