Ingredients for 4 servings:
- 1 bag of gnocchi (600g)
- 400 g minced meat
- 2 stalk(s) spring onions
- 1 large bell pepper
- 2 large tomatoes
- ½ package of feta cheese (100 g)
- 3 eggs
- salt and pepper
- Garlic
- Herbs of Provence
- some milk
- Butter or oil for frying
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Dice the spring onions and bell peppers. Brown the minced meat in a little oil or butter (season with a little more if desired). Add the chopped spring onions and bell peppers to the minced meat and fry. Once the minced meat is cooked through, add the gnocchi and continue frying on a lower heat. While everything is cooking, dice the tomatoes and feta cheese (or before, if desired). When the gnocchi are ready, add the tomatoes and feta cheese and let the cheese melt slightly. Mix the eggs with the spices and milk until smooth and add to the dish. As soon as the eggs have set, it’s best to serve them warm straight away. Enjoy!
