Ingredients for 4 servings:
- 1 kg jacket potatoes
- 150 g leek
- 125 g bacon, streaky
- 4 tbsp butter
- 4 eggs
- 6 tbsp whipped cream
- 2 tbsp mixed herbs, chopped
- Salt and pepper from the mill
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Roughly dice the jacket potatoes. Cut the leek into thin strips. Finely dice the bacon and fry in a large pan until translucent. Add butter. Fry the potato cubes until golden brown. Season with salt and pepper. Briefly fry the leek strips. Mix the eggs with the whipped cream and herbs and season with salt and pepper. Pour over the potatoes, fry until golden brown, and toss again. Serve with iceberg lettuce or cucumber salad.
