Casserole with green beans, potatoes, tomatoes and Gelderland bacon

Ingredients for 2 servings:

  • 500 g beans (runner beans)
  • 4 large potatoes, boiled, with skin
  • 4 tomatoes
  • 1 slice(s) bacon (Gelderland belly bacon)
  • 2 eggs
  • 1 cup sour cream
  • salt and pepper
  • n. B. Cheese, grated
  • garlic powder
  • Paprika powder

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Trim the green beans, cut them into bite-sized pieces, and boil them briefly in salted water until al dente. Drain and place them in a baking dish (grease non-stick ones first). Cut the potatoes and tomatoes into chunks or slices and add them to the baking dish. Whisk the eggs with the sour cream and season with salt, pepper, garlic powder, and paprika. Pour over the vegetables. Add the diced Gelderland bacon and top with the bacon. Cover with cheese. Bake for approximately 20-30 minutes at 180°C.
