I discovered Prilleken in an ancient recipe book and would like to share it with you. Highly recommended for afternoon coffee. Knead a yeast dough from flour, yeast, milk, sugar, butter, lemon zest, and salt. Form the yeast dough into balls and flatten them. Let the balls rise for about 30 minutes. Heat the frying fat (lard) and fry the Prilleken in batches until golden brown. Eat as hot as possible and sprinkle thickly with sugar. Serve with applesauce or apple compote.
