Scampi in tomato and chard sauce

Ingredients for 4 servings:

  • 4 plum tomatoes
  • 1 bunch chard, chopped
  • 225 g scampi, thawed
  • Olive oil for frying
  • salt and pepper
  • 3 cloves garlic
  • 75 ml cream
  • Chili to taste
  • possibly herbs, fresh

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Peel and slice the garlic cloves. Then fry them briefly in olive oil until lightly golden. Add the finely chopped chard and sauté briefly. Then stir in the diced plum tomatoes. Fry everything for about 10-15 minutes. In another pan, fry the scampi and add them as well. Finally, pour in the cream and season with salt and pepper. If desired, you can also stir in fresh herbs. I used flat-leaf parsley and basil, along with a touch of dried chili.
