Spaghetti with prawns in coconut-turmeric-spinach sauce

Ingredients for 4 servings:

  • 500g spaghetti
  • 400 ml coconut milk
  • 250 g shrimp(s), frozen
  • 450 g spinach
  • 3 cloves garlic
  • 1 chili pepper(s), medium hot
  • 2 tsp turmeric
  • salt and pepper
  • some olive oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

First, marinate the shrimp in a mixture of olive oil, garlic, chili, salt, and pepper for about an hour, allowing it to thaw. Cook the pasta as usual. Briefly heat the shrimp and the resulting sauce in a pan over medium heat, pour in the coconut milk, and simmer for 10-15 minutes. Stir in the spinach, let it wilt, and simmer briefly. Season with salt, pepper, and turmeric. Serve with the spaghetti.
