Apricot and quark tartlets

Ingredients for 1 servings:

  • 3 eggs, separated
  • 1 pack of vanilla sugar, real
  • 70 g sugar
  • 150 g flour
  • 1 pinch of baking powder
  • 125 g quark
  • 100 g cream
  • 1 small can of apricots, 450 ml, drained, collecting the juice
  • 75 ml juice (ACE or multivitamin juice)
  • 75 ml apricot juice from the drained apricots
  • 2 tbsp sugar
  • 6 sheets of gelatin
  • 75 ml apricot juice from the drained apricots
  • 75 ml juice (ACE or multivitamin juice)
  • 2 ½ sheets of gelatin
  • 100 g cream
  • possibly chocolate decoration

Instructions

Working time approx. 30 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 10 minutes; Total time approx. 6 hours 40 minutes

For cutting out and finishing, it’s best to use dessert rings/molds, which are available in a variety of shapes. Mine were heart-shaped. For the sponge cake, beat the egg whites until stiff peaks form. Then, in a separate bowl, beat the egg yolks until very foamy, then drizzle in the sugar and vanilla sugar. Sift the flour, with baking powder if desired, and lightly fold in along with the egg whites. Transfer to a springform pan and bake at 160°C (top/bottom heat) for 7-10 minutes. Cut out the sponge cake using the molds. Place one sponge cake in each mold. Mix the quark with the two juices and the sugar. Soften the gelatine in a little cold water. Whip the cream with the sugar until stiff peaks form. Squeeze out the gelatine and melt it in a double boiler or in the microwave. Adjust the temperature by adding 1 tablespoon of cream. Then stir this into the quark and juice mixture, let it set slightly, and fold in the cream. Pour the mixture into the molds, making sure it’s as neat as possible. Allow it to set slightly. For the glaze, soften the gelatin in water, then squeeze it out and dissolve it in a water bath or in the microwave. Adjust the temperature by adding 1 tablespoon of juice. Mix this with the remaining juice and carefully pour the glaze onto the cakes. Allow it to set. If you like, decorate the cakes with cream and chocolate chips or chocolate decorations. Makes 6 cakes.
