Mediterranean zucchini, peppers and feta cheese pan

Ingredients for 2 servings:

  • 1 zucchini
  • 1 bell pepper
  • 1 tbsp olive oil
  • 1 tsp rosemary, fresh or dried
  • 1 pack of feta cheese

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

low carb, quick and easy

Cut the zucchini into thin strips and fry them well in olive oil in a large pan. Cut the peppers into strips and fry them separately in another pan, or add them to the zucchini. Just make sure that they develop a nice roasted aroma. The peppers should be soft, but still have a bite, if you like. Then cut the feta cheese into thin strips and dice it and spread it over the vegetables, sprinkle with rosemary, cover the pan, and turn the heat down slightly. The cheese should melt over the vegetables. Don’t add salt, as the cheese already contains a lot of salt.
