Potato and sausage salad plate

Ingredients for 2 servings:

  • 500 g potatoes
  • 1 cube of meat broth
  • 1 onion(s)
  • 8 tbsp Miracle Whip
  • 400 g Leberkäse (meatloaf)
  • 4 gherkins
  • Parsley
  • 1 egg(s), boiled, sliced

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

For the potato salad, boil the potatoes with their skins on. Let the potatoes cool, peel them, and slice them. Peel and finely chop the onion, then fry it in a small saucepan. Add 1 small cup of water, 1 teaspoon of salt, the meat stock cube, and 2 tablespoons of vinegar. Bring to a boil and pour over the potatoes. Let it stand for about 30 minutes. Then toss the potatoes with 4 tablespoons of Miracle Whip. For the meat salad, cut the meatloaf and gherkins into thin strips. Toss with 4 tablespoons of Miracle Whip. Have 2 plates ready. Place the meat salad in the middle of both plates. Spoon the potato salad over the meat salad so that it is completely covered. Garnish the plate with parsley, gherkins, and boiled egg slices.
