Ingredients for 1 servings:
- 100 g flour (wheat flour)
- 3 tsp baking powder
- 75 g sugar
- 1 tbsp vanilla sugar
- 2 eggs
- 2 tbsp oil
- 12 sheets of white gelatin
- 500 g quark (low-fat quark)
- 250 ml juice (blood orange juice)
- 250 ml passion fruit juice
- 100 g sugar
- 250 ml whipped cream
- 1 pkt. cake glaze, red
- 250 ml passion fruit juice
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
For the dough, mix the flour with the baking powder and sift it into a mixing bowl. Add the sugar, vanilla sugar, eggs and cooking oil. Using a hand mixer fitted with a whisk, mix the ingredients until you have a smooth dough in about 2 minutes. Pour the dough into a springform pan (Ø 26) lined with baking paper and smooth it out. Place the pan on a rack in the oven and bake at 200°C for 20 minutes. Turn the cake base out onto a wire rack lined with baking paper, peel off any baking paper that has been baked on it and allow to cool. Then place it on a cake plate and place a cake ring around it. For the topping, soak the gelatine in cold water according to the package instructions and then squeeze it out lightly. Heat the gelatine while stirring until it is completely dissolved. Mix the quark with the orange juice, passion fruit juice and sugar. Mix some of the quark mixture with the gelatine, then mix with the remaining quark mixture. Chill. Whip the cream until stiff. When the quark mixture begins to thicken, fold in the cream. Pour the quark and cream mixture onto the cake base, smooth it out, and refrigerate. For the glaze, prepare a glaze from the cake glaze powder and passion fruit juice according to the package instructions. Let it cool slightly and carefully spread it over the cream. Allow the glaze to set. Remove the cake ring.
