Sweet and sour lamb's lettuce

Ingredients for 4 servings:

  • 100 g lamb’s lettuce
  • 4 figs
  • 4 slice(s) ham, air-dried
  • 2 tbsp walnuts
  • 2 tbsp sugar
  • 1 pinch of coriander powder or allspice
  • 1 garlic clove(s)
  • 1 lemon(s), untreated, zest and juice
  • ½ vanilla pod(s), the pulp
  • 1 tbsp white wine vinegar
  • 1 tbsp honey
  • 5 tbsp sunflower oil
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

With walnuts and figs

Mix the sugar, coriander, and allspice and caramelize in a pan. Finely chop the walnuts and stir in. Let cool on parchment or baking paper. Trim and wash the lettuce, and spin dry. Wash the figs, trim the ends, and halve them. Briefly fry the cut sides in a pan with hot oil. Halve the ham slices. For the dressing, peel the garlic and finely chop. Mix with the lemon juice and zest, vanilla bean paste, vinegar, and honey. Gradually whisk in the oil. Season with salt and pepper. Toss the salad with the dressing and divide between the plates. Arrange the figs and ham on top. Sprinkle with the caramelized nuts.
