Ingredients for 1 servings:
- 150 g butter biscuits
- 20 g butter
- 75 g chocolate
- 250 g low-fat curd cheese
- 1 packet of vanilla sugar
- 1 tbsp sugar
- ½ pack of gelatin
- 250 g raspberries
Instructions
Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes
for a 16cm springform pan
Place the cookies in a freezer bag and mash them with a rolling pin or a saucepan until they are finely crumbled. Melt the chocolate and butter in a double boiler and mix with the crumbled butter cookies. Pour the cookie mixture into the springform pan and press down firmly. Place the base in the refrigerator for at least an hour. In the meantime, mix together the quark, sugar, and raspberries. Soften the gelatin according to the package instructions and mix with the cream. Spread the cream over the chilled base and return to the refrigerator for at least 2 hours so the gelatin can set. I personally like to leave some of the raspberries and cookies over for decoration; however, the cake can also be beautifully decorated with things like chocolate drops or cocoa powder.
