Ingredients for 12 servings:
- 500 g puff pastry, fresh or frozen
- 300 g jam, as desired
- 300 g fruit, as desired
- 400 g crème fraîche
- 4 sheets of gelatin
- 400 g cream
- 1 pack of cream stiffener
- 2 packets of vanilla sugar
- Fruits, for garnishing

Carefully roll out the puff pastry thinly and cut into rectangles of any size. Always make sure that two are the same size. Place at least 2 cm apart on a baking sheet lined with baking paper and pierce several times with a fork. Bake at 200°C for about 15-20 minutes until golden brown. Let cool on a wire rack. Spread the jam on matching rectangles and place the fruit in the center of one of them. Soften the gelatine, dissolve it and mix it with the crème fraîche. As soon as the mixture starts to set, whip the cream with the cream stiffener and vanilla sugar until stiff and fold in. Transfer to a piping bag. Pipe the cream onto the puff pastry pieces with the jam and fruit and cover each with a piece of puff pastry. Garnish with the remaining cream and some fruit. The fruits should ideally be chosen to match the jam, e.g. strawberries with strawberry jam, mixed berries with wild berry jam, apricots with apricot jam, etc. The slices taste best fresh!
