Mirabelle cake with quark cream and crumble

Ingredients for 1 servings:

  • 125 g butter or margarine
  • 60 g sugar
  • 3 eggs
  • 1 pack of orange flavor
  • 400 g flour
  • 1 packet of baking powder
  • e.g. milk, approx. 2 – 3 tbsp
  • 500 g low-fat curd cheese
  • 400 ml whipped cream
  • 2 packets of vanilla pudding powder
  • n. B. Orange flavor
  • 150 g flour
  • 80 g butter or margarine
  • 80 g sugar
  • 1 pinch of cinnamon
  • 900 g mirabelle plums, pitted

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

For the dough, cream the butter, sugar, and eggs until fluffy. Add the flavoring. Mix the flour with the baking powder and slowly stir in. Add about 2-3 tablespoons of milk. The dough should not be too runny. For the cream, mix the quark, heavy cream, vanilla pudding, and orange flavoring with a hand mixer. For the crumble, knead the flour, sugar, butter, and a pinch of cinnamon, if desired, into crumbles. Line a baking tray with baking paper. Spread the dough on the baking sheet, scatter the mirabelle plums on top, pour over the quark cream, and finally scatter the crumble on top. Bake in the oven at 150-160°C (fan oven) for about 60-70 minutes.
