Spiced Pecan Cookies

Ingredients for 1 servings:

  • 220 g butter or margarine
  • 40 g powdered sugar
  • 80 ml maple syrup
  • ¼ tsp salt
  • ¼ tsp vanilla extract
  • 320 g flour
  • 120 g pecans
  • 2 tsp, heaped cinnamon powder
  • ½ tsp clove powder
  • ¼ tsp cardamom powder

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat the oven to 160°C (fan/circulating air). Chop the nuts, reserving some nice nut halves for decoration if desired. Mix butter or margarine with powdered sugar, maple syrup, salt, and vanilla extract until a soft dough forms. Stir in the chopped nuts. Sift the flour and mix with the spices. Gradually add the mixture and knead into a smooth dough. Tip: If the dough is too soft, place it in the freezer for about 10 minutes. Then shape the dough into a log about 4 cm in diameter and cut into slices about 0.5 cm thick. Decorate a few cookies with the reserved nut halves, pressing lightly to ensure the nuts stick. Place the cookies on a baking sheet lined with baking paper and bake in the preheated oven at 160°C (fan/circulating air) for about 20 minutes.
