Ingredients for 4 servings:

  • 2 heads of lettuce (lettuce, iceberg lettuce, lamb’s lettuce, etc.)
  • 4 sprigs of parsley
  • 4 lean pork schnitzels
  • 1 cup olive oil
  • some salt and pepper
  • 1 cup flour
  • 1 egg(s)
  • 1 cup breadcrumbs
  • 1 kg potatoes
  • salt water
  • 10 tbsp olive oil, good
  • 3 tbsp balsamic vinegar
  • 1 m.-sized onion(s)
  • some salt
  • little sugar
  • n. B. Herbs, fresh according to season
  • parsley for garnishing

Clean, shred, and wash both lettuce heads, possibly spin-drying or drying them. For the dressing, peel and finely chop the onion, and sauté it in a little olive oil until translucent. In a bowl, mix the olive oil, balsamic vinegar, herbs, salt, sugar, and the sautéed onions. You can use any dressing you like, but it is important to use a good quality oil. The dressing should be sufficient, as it also serves as a sauce for the potatoes and schnitzel! Peel the potatoes and boil them in salted water. Pat the schnitzel dry with kitchen paper, season with a little salt and pepper, and coat in flour, egg, and breadcrumbs. Fry the schnitzel in hot olive oil, turning only once. Mix the dressing into the salad. A dry Riesling goes well with this. Arrange the schnitzel, potatoes, and plenty of salad on a plate. Garnish the salad with 1 or 2 sprigs of parsley.
