Oven-baked pumpkin with apple and onion

Ingredients for 2 servings:

  • 1 pumpkin(s) (e.g. butternut)
  • 1 cup crème fraîche
  • 1 large apple, sour (e.g. Boskop), diced
  • 2 small onions, diced
  • 1 tbsp oil
  • 1 tbsp butter
  • a little salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cut the pumpkin lengthwise and hollow out the insides generously. Brush the inside with oil, then season with salt and pepper. Bake on a baking sheet in a preheated oven at 200°C – 220°C for approximately 50-60 minutes, depending on the size and thickness. Briefly sauté the apple and onions in melted butter. When the pumpkin is tender, fill the hollows with the apple and onion mixture. Serve with crème fraîche, seasoning with more salt and pepper if desired.
