Ingredients for 2 servings:
- ¼ red cabbage
- 1 apple
- 1 carrot(s)
- 70 ml sherry vinegar
- 1 tbsp maple syrup or honey
- 1 tsp Dijon mustard
- 1 small Hokkaido pumpkin(s)
- olive oil
- 2 tsp paprika powder
- 1 can Jackfruit, 225 g drained weight
- 3 tbsp olive oil
- 1 onion(s)
- 2 tbsp soy sauce
- 180 g BBQ sauce
- salt and pepper
- spring onion(s)
- Sour Cream
- coriander
- chili sauce
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
Finely chop the red cabbage. Peel and coarsely grate the apple and carrot. Then mix everything well in a bowl. In a cup, combine the sherry vinegar, maple syrup, mustard, salt, and pepper and stir into the vegetables in the bowl. Let the salad marinate in the refrigerator for at least an hour. Preheat the oven to 220°C (top/bottom heat). Halve the pumpkin, remove the seeds, and cut into 1-2 cm wide wedges. Arrange these on a baking sheet lined with baking paper and season with a little olive oil, paprika, salt, and pepper. Bake the pumpkin on the middle rack for 25 minutes. Drain the canned jackfruit into a sieve and rinse with cold water. Then, either by hand or between kitchen paper towels, squeeze out any excess liquid from the fruit pieces. Then, slightly shred the jackfruit with your fingers or two forks. Chop the onions, heat the olive oil in a pan over medium heat, and sauté the onions for a few minutes. Now add the jackfruit and roast for a few minutes. Add the soy sauce and simmer until the liquid has completely evaporated. Then stir in half of the BBQ sauce. Simmer everything for 5-7 minutes until the BBQ sauce has reduced slightly. Then add the remaining BBQ sauce and transfer the jackfruit to a baking dish. Place this in the oven until the pumpkin wedges are finished cooking, but for at least 10 minutes. Arrange the pumpkin wedges on a large plate or wooden board. Top with the BBQ jackfruit and the red cabbage and apple salad. You can now refine the whole thing with ingredients of your choice: spring onions, sour cream, coriander, or a little more chili? It tastes delicious even without toppings!
