Asian chicken with broccoli and soy sauce

Ingredients for 2 servings:

  • 500 g chicken breast
  • 500 g broccoli
  • 1 handful of almonds, peeled
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • Pepper, white

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Pat the chicken dry and cut into cubes. Wash and trim the broccoli, and cut into smaller florets. Finely chop the almonds or cut into sticks. Heat the vegetable oil in a wok and sear the chicken. Then remove and keep warm. Add the broccoli to the wok and sear it as well. Deglaze with the soy sauce and a little water and simmer for a few minutes, until just firm to the bite. Add the chicken back in and finish cooking. Season with pepper and a little more soy sauce, if desired. Arrange on plates and serve sprinkled with the almonds.
