Chicken breast with mushrooms

Ingredients for 2 servings:

  • 250 g mushrooms
  • 6 tbsp butter
  • 2 chicken breast fillets
  • ½ lemon(s), juice
  • 125 ml cream
  • Salt and pepper, white

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Clean and slice the mushrooms. Fry them in 3 tablespoons of butter, season lightly with salt, and keep warm on a plate covered with aluminum foil. Unfold the chicken breast and lightly flatten the fillets. First rub with lemon juice, then season with salt and pepper. Heat the remaining butter in a pan and fry the chicken breast on both sides. Then place the fillets on preheated plates, top with the mushrooms, and keep warm. Loosen the pan juices with the cream and simmer for 3-4 minutes. Season with salt and pepper. Pour the sauce over the fillets and enjoy immediately. Serve with: rice, gnocchi, duchess potatoes, herb and garlic baguette, and salad. Variations: Add garlic or rosemary salt for seasoning. Stir in finely diced shallots. Turkey schnitzel can also be used instead of chicken breast.
