Quick quark crumble cake with mandarins

Ingredients for 1 servings:

  • 250 g butter
  • 250 g sugar
  • 1 packet of vanilla sugar
  • 1 egg(s)
  • 1 packet of baking powder
  • 600 g flour
  • 1 kg low-fat curd cheese
  • 1 packet of vanilla pudding powder
  • 200 g sugar
  • 1 egg(s)
  • 2 tbsp lemon juice
  • 2 cans of tangerine(s)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes

Melt 250g butter and let cool slightly. Knead the flour, baking powder, 1 egg, 1 sachet of vanilla sugar, 250g sugar, and the melted butter into crumbles. Preheat oven to 180°C. Line a deep baking tray with baking paper and spread 2/3 of the crumbles on top, pressing firmly into place. For the topping, mix 1kg low-fat quark, 1 sachet of vanilla pudding powder, lemon juice, 1 egg, and 200g sugar well. Spread over the crumble base and smooth it down. Drain the mandarins and scatter them over the quark mixture. Spread the remaining crumbles over the cake. Bake at 180°C fan-assisted oven for about 35 minutes.
