Sweet potato soup with apples

Ingredients for 8 servings:

  • 550 g sweet potatoes
  • 150 g carrot(s)
  • 400 g apples, sour
  • 1 onion(s)
  • 1 liter vegetable broth
  • 200 g sour cream
  • oil
  • Cayenne pepper
  • Salt
  • possibly roasted sesame seeds

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

exotic, creamy, delicious

Peel and dice the onion, potatoes, and carrots. Peel the apples, core them, and dice them. Heat a little oil in a saucepan and sauté the diced onions until translucent. Add the potatoes and carrots and sauté for about 5 minutes. Pour in the broth and simmer for 20 minutes. After 10 minutes, add the apple pieces. Remove the pan from the heat, stir in the sour cream, purée the soup, and season with salt and cayenne pepper. Sprinkle with toasted sesame seeds to serve, if desired.
