Pumpkin and Apple Soup

Ingredients for 4 servings:

  • ½ kg pumpkin flesh
  • ½ kg apples, a sweet variety
  • 1 liter vegetable broth
  • 1 large onion(s)
  • Oil for the pan
  • 1 tsp nutmeg
  • Oil, pumpkin seed oil
  • 70 ml cream
  • Soy sauce
  • salt and pepper

The best pumpkin soup in the world

In a large pot, sauté the chopped onion lightly. Then add the pumpkin and apples, cut into puréeable pieces, pour in the vegetable stock, and simmer for about 15 minutes. When the pumpkin is soft, purée everything finely and season with nutmeg, a little soy sauce, and pumpkin seed oil. Season with salt and pepper. Add the cream, stir well, and season again to taste.
