Apple and cinnamon cake with quark

Ingredients for 1 servings:

  • 50 g sugar
  • 250 g flour
  • 1 egg yolk
  • 1 tbsp baking powder
  • 125 g butter, soft
  • 500 g apples, peeled
  • 250 g quark
  • 50 g sugar
  • 1 packet of vanilla pudding powder for cooking
  • 3 egg yolks
  • 3 egg whites
  • Cinnamon sugar for sprinkling

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

For the shortcrust pastry, mix the ingredients into a dough. Pour 2/3 of the dough into a greased springform pan, shape the rest into a log and press it against the edges. For the topping, quarter the peeled apples and cut into approximately 1 cm thick slices. Mix together the quark, egg yolks, sugar, and custard powder. Beat the egg whites until stiff peaks form. Then fold the beaten egg whites into the quark mixture. Pour this mixture into the springform pan and spread evenly. Then place the apple pieces on top. Finally, sprinkle the sugar and cinnamon mixture over the top. Bake the cake at 185 degrees Celsius for approximately 50 minutes.
